Summer Shape Up 2014 is a 4 week program created by Gina, a certified personal trainer and Anne, a registered dietician. Gina creates weekly workout plans with high intensity, strength training, steady cardio and flexibility while Anne creates an amazing weekly grocery list with recipes I wish I would have known about years ago!
THE MEAL PLAN
Since I got back late on Sunday night and wasn’t feeling the best yesterday, I got to late a start on the nutrition plan. When I run out of time, eggs are my go to! Tonight’s entree:
Of course topped with some hot sauce!
I thought tonight would be the perfect night to food prep my breakfasts for the next few days. From Anne’s lovely meal plan, I decided to make the Scrambled Egg Muffins. I seriously love eggs and wish I had them more in the mornings, but always seem to run out of time to make them!
This was super easy to make and so delicious! I’m already in love and can’t wait to go to bed so I can wake up and have some for breakfast! 🙂
I used 8 eggs:
Threw in some cayenne pepper, salt, basil, pepper, almond milk, spinach, flour and powdered cheese:
Whisked it all together and poured it into a muffin pan:
Put them in the oven for 25 minutes:
And woolahhh. So delicious!

This morning I ran the 20 minute HIIT on a treadmill and wow is about all I can say! I workout about five days a week and have done a few cardio interval circuits on the treadmill, but for some reason this workout really got me. Since today was my first day, instead of doing 30 seconds normal pace and 30 seconds sprint, I did 45 seconds normal pace and 30 seconds sprint. This allowed me more time to recover after each sprint.
I am hoping on Friday I can do the 30 seconds normal pace and 30 seconds sprint.
The workout 1 was honestly one of my favorite circuit workouts I have done. I really liked how Gina used a mixture of upper body and lower body exercises throughout the circuit. It took me a total of:
..to complete the circuit three times through!
This past year, I have focused most of my workouts on running and the elliptical and haven’t done much strength training. This workout brought me back to my college days full of competitive workouts and I know I’m going to feel it in the morning. 🙂
