How was everyone’s day? Work was a little cray-cray, but my Scrambled Egg Muffin started the day off beautifully. I went shopping over my lunch hour and found 2 for $3 raspberries and strawberries! What a steal!
I absolutely love the summer time and I love it even more because of all the fresh fruit and veggies. I decided to top my salad with a little bit of the raspberries and a peach. So good!
My teeth actually hurt a little bit from all the fruit. I believe there is a thing as eating too much fruit, but I just couldn’t help it!
I would have to say I am extremely sore today after my Day 2 workout yesterday. After lunch I went on about a 20 minute walk and found my hip flexers were very sore from sitting all morning. Since I haven’t done much strength training this past year my hamstrings, glutes and hips haven’t had to work very hard! 🙂 If I had to go back into my college basketball days and attempt a court workout or lifting circuit, I think I would collapse the first five minutes!
Today’s workout was a 30 minute steady state. I got my handsome boyfriend, Tyler, to join me.

All Tyler can do when I start snapping pictures is shake his head with that damn smile and handsome dimples. He loves it.
The first five minutes were a little tough since my hip flexers were screaming. But as they loosened up the run was the best thing for them.
We have had some bad weather the last few days and nights so it was good to have a 30 minute window of nice weather for an outdoor run.
After the workout, it was time to try out some of Anne’s meal plan recipes. I absolutely loved the Scrambled English Muffins I made last night so I was even more excited to see what was up for tonight.
THE MEAL PLAN
Easy Coconut Curry was on the menu for tonight, and unfortunately Tyler and I both aren’t huge coconut fans. We decided to go with the Tuna Salad with a Healthy Twist.
Tyler is obsessed with tuna. I think he could eat if for every meal and never get sick of it. When I told him I wanted to make it he said he already had a can of tuna when he got home from work, but nothing was going to stop him from having more for supper! What a stud 🙂
I used celery, spinach, canned tuna, balsamic vinaigrette, vanilla greek nonfat yogurt, mustard and whole wheat bread/bagel:
Tossed the tuna, yogurt, mustard and balsamic together:
Added the celery and then added some cayenne pepper. Tyler and I literally put cayenne pepper on or in anything we eat. I think it’s an addiction:
And boom roasted:
This literally was so quick and easy to make. I don’t understand why I have never thought of this before. Most nights we spend about an hour making supper or if we don’t feel like cooking we resort to eggs. This may be our new favorite and become a staple in our house.

It honestly was sooooo good! We had left overs so I may put some on my salad for lunch tomorrow. That is if I get to it before Tyler does 😉
I am absolutely loving Gina and Anne’s Summer Shape Up 2014 week 1 workout plan and meal plan. I can’t get over the amazing recipes that I wish I would have known about forever ago and how sore the workouts have gotten me already on Day 3. I’m so excited to finish this week up and see what week 2 has in store!
