How was everyone’s day?!
I started it off with an amazing avacado and honey bagel.
How can my day not go good after this?!
I have so much to share I don’t even know where to start!🙂 Week 2 Summer Shape Up by far kicked my butt today. The workout was a killer. At first glance of workout 2 I was thinking it wasn’t going to be as hard as workout 1, but boy was I wrong!
I started the workout with a 20 minute steady run outside. You will never believe what I ran into!! A SKUNK and her babiessssss! I literally didn’t know what to do so of course, the blogger in my was like, you need to get a picture of that!
As soon as I got my phone out they ran into the bushes.
I was not about to wait around to get the shot either. I would have to say that was the first time I have ever seen a skunk up close and personal. Thank goodness I wasn’t running fast enough to scare it. I would have smelled for weeks!
After my skunk run, it was time for workout 2 and I absolutely loved ever single move of this workout. Gina did it again with this workout and then some. Like I said earlier, I didn’t think this workout was going to be as tough as last week, but I literally was dripping in sweat after the workout.
From lunges to single side jumping lunges, sumo deadlift to plie squat and jumps, my thighs were feeling it! Of all the exercises, the TELE (tuck, extend, lift, extend) abs were intense! I’m not sure if my abs were feeling it from the yoga yesterday or if the TELE abs were just that intense, but I felt it after the first set.
I left the gym feeling so accomplished and there is nothing better than that!
THE MEAL PLAN
Tonight was the only night I was able to make a big supper so I decided to go with the Pesto Baked Salmon. As I have mentioned in recent posts, I’m a sucker for anything with pesto. This recipe ladies and gentleman blew my mind. I modified the recipe slightly since I didn’t have zucchini or squash.
I used lemon seasoned salmon, pesto, Del Monte diced tomatoes, celery and Quinoa:
Spread the pesto on the salmon:
Poured the diced tomatoes into the dish:
Added some celery for some crunch and taste (celery adds so much to a dish):
Put it in the oven at 400 for 18 minutes. While that was cooking I made some Quinoa:
Put the salmon and tomatoes over the Quinoa:
Honestly, I never would have thought of making this recipe. I absolutely love fish and usually bake it in the oven plain. This has now become my new way of baking fish! It was so tasty. There was the salmon and pesto flavor, topped with the celery crunch and sweet tomatoes. My mouth is watering again.

As I said earlier, this week is pretty busy so I used some of the left over pesto and Quinoa and mixed it with spaghetti noodles for tomorrow’s supper:

I feel like today was a win-win with this workout and supper!
This challenge/program seems to surprise me every single day. Gina and Anne have been so encouraging and supportive throughout the first few weeks which makes this challenge even more fun to participate it. I’m learning new exercises and easy to make recipes. I have always been a big health nut, but never really took the time to make such good breakfast, lunch and dinners. Anne has taught me it doesn’t have to take all day to make a healthy and delicious meal!
