I just finished a five mile run early this morning and it was one of the most incredible experiences I have ever had. Throughout the entire run there was almost like a mist in the air, but it wasn’t raining. It was so refreshing. There also was a rainbow starting towards the end of my running path.
It’s a little hard to see in these pictures, but it was so beautiful.
I seriously am loving this Summer Shape Up challenge. It seems that every day I’m looking forward to my next workout and my next meal. As I have mentioned before, I have been doing the same ole routine for the past year. It was getting to the point where my body was used to each days workout. It was time to changes things up.
Summer Shape Up has done just that for me and has helped improve my energy level, my mind-body connection and helped me learn I really like creating new meal plans each day. It’s crazy how participating in a challenge like this can change so much in my every day life and help me break out of the routine of each day!
Last night I did a 15 minute steady run at a faster pace than I normally would to really get my heart rate up since the run was a short one.
Then it was on to workout 3! This week’s workout is a lot different than the first two weeks and had more of a competitive edge to it. The goal was to set a timer for 25 minutes and go through the six exercises as many times as you can. Before the circuit, you start with a “buy in” of 25 burpees (they burn), then it’s go time. My goal this week is to get a little bit faster each day I do workout 3! I finished five full rounds and got all the way to 30 seconds into the last cardio move in the sixth round when my timer beeped. I was dripping in sweat and every single muscle in my body was shaky. The workout ended with a 3-minute plank and I thought my arms were going to break! Unfortunately, I had to collapse twice during the plank so my goal for Thursday is to complete six full rounds and hold the plank for the full three minutes!
THE MEAL PLAN
The meal plans in week 3 so far have been phenomenal.
I loved both of these meals and they were so easy to make!
In the past I haven’t been a huge fan of green smoothies, there is just something about them that never settles well with me. But the mixture of pear, pineapple, banana and applesauce was absolutely fantastic.
I used spinach, pineapple tidbits, 1 pear, 1 banana and I substituted applesauce for apple juice:
Mix it all together. And wallah. Amaziness all over!
As Tyler and I were making our Balsamic Chicken Monday night, I made some extra quinoa for lunch yesterday and decided to take two of Anne’s recipes and mix them together. I loved the sound of the Deconstructed Quinoa Burrito with the cilantro and salsa, but I also loved the sound of the Lemony Spinach and Bean Salad so I thought, why not do both!
I used spinach, kidney beans, quinoa, cilantro, salsa, feta cheese, garlic powder and of course, cayenne pepper:
While the quinoa was cooking I steamed the 2 cups of spinach in the microwave for about 1 minute:
Added some cayenne pepper (of course when don’t I), the kidney beans and feta cheese:
Mixed it all together and added the quinoa, cilantro and salsa (I mixed mild and hot salsa to add an extra kick):
I usually stick to a very simple and bland salad for lunch so I was looking forward to 12:00 pm all morning so I could try this tasty dish. Let me tell you, it was so good and different than what I’m used to. My taste buds were loving me yesterday!
I would say after workout 3 and the meals yesterday and my 5 mile run this morning, it has been a pretty successful Summer Shape Up week so far. Today is a little bit more busy since I’m headed for vacation on Thursday so I’m very happy I was able to try so many of Anne’s dishes early this week.
