Good Morning All-
How is your week going? Mine is going pretty good and fast like always. Last night I drove an hour and a half back home to do a little training/coaching session for some of the girls on the high school basketball team. It was a great training and I hope they walked away with a lot of drills to practice on their own. I always love teaching others what I have learned through my own experience. On my drive home, the sky looked absolutely amazing.
If you know me, I am obsessed with pictures of the sky. I may or may not take a picture daily of the sunrise or sunset….guilty! 🙂
Summer Shape Up has been a really good change in routine for me. As many of you know, I am a fitness fanatic and love to eat healthy, but when I first started blogging I noticed it was challenging at first to share different workouts and recipes because I was always doing the same workout and eating the same meals week after week. Summer Shape Up has really pushed me to go out of my comfort zone to try all of these new workouts and meal plans and guess what….drum rollll….. I love it!
The workout 4 was really, really good. I completed the full workout on Tuesday and my arms are still a little sore from it today. Tonight I will complete the workout again along with 20 minutes of hills and I can only imagine how tough it’s going to be!
My favorite part of the workout was the order of the push-up to side plank with kick out, burpee side to side hop and the plank reach. By doing these three exercises in a row, my shoulders and arms were burning (a good burning of course) and I truly felt like I had to mentally talk my body through these moves.
I love when I’m challenged and am able to complete workouts even when my arms are shaking, such an accomplished feeling!
For week 4 meals, I have been enjoying the Carrot Cake Muffins for dessert all week (this was actually on week 3 menu but I needed to try it!)
They are so moist and tasty. These muffins definitely go into my favorite baking recipes Anne has offered during the Summer Shape Up challenge.
Mixed the flour and sugar together:
Sliced the carrots:
Mixed them with the apple sauce and add the wet mixture to the dry:
Put into a muffin pan and baked on 350 for 25 minutes:
Dig in! 🙂
I of course had to try mine when they were still warm causing it to fall apart when I unwrapped the muffin, but it was so moist and delicious!
I think it’s time for you to check your cupboards for all of these ingredients and start making your muffins, you will be so happy you did! 🙂
