Zucchini Alfredo Pasta

Happy Wednesday!

So most weeks for me fly by and I’m sure if you have read any of my Friday Dance posts you have heard that time after time! But this week is going sooooo slowwwww! I think because I put in my two weeks on Monday, it has made the week turn into slow motion which has goods and bads to it! I’m glad I get to soak up each second with all of my coworkers, but I feel like I can’t remember how to write since my brain is cashing out! My cubbie buddie told me it’s totally normal, so at least I don’t feel nearly as guilty! 🙂

When the clock finally turned to 5:00 pm, I raced home to start cleaning and preparing the apartment for hopeful (cross your fingers) showings within the next few weeks! I still can’t believe we are leaving Madison. I’m so excited, yet so sad because I love everything about Madison and our cute apartment! There is a lot of stress in hopefully finding a subleaser and then a new place to live, but I’m going to trust that God has a plan and it will all work out. It may not be convenient all the time, but it will work out. I just need to remember my two favorite sayings:

Our job is to believe. It’s God’s job to do the impossible.

As I finished up some of the picking up, I realized I still had a zucchini in my refrigerator that needed to be ate. I had planned on making Alfredo that night and thought hmmm what could I do with Alfredo and zucchini. I have always wanted to try zucchini pasta and thought, why not! I had no idea what to expect. IT WAS AMAZING!! And sooo easy.

I was going to thaw out some chicken and then……I didn’t. 🙂 So it was a very plain dish, but the zucchini added so much flavor that I didn’t even miss the chicken!

I also made noodles for Tyler since I figured he wouldn’t want to try the zucchini noodles, but I was way wrong on that one! So we mixed together the pasta and zucchini noodles!

How to make zucchini pasta:

There are many different ways you can do this. You can keep the skin (where most of the vitamins are) or peel it of. Depends on your preference. I choose to keep the skin! 🙂

I found that a potato peeler works the best when making these noodles.

Then, you can choose if you do want to cook them or eat them raw. I decided to cook them! 🙂

When Tyler got home from basketball, he asked what in the world the green stuff was. Ha…men! When I told him Zucchini pasta, he goes hmmm, and took some on his plate. My jaw literally dropped. I love this man! I didn’t even complain when I had to use both pasta and the zucchini as my noodles because I was so happy he tried it!

Zucchini AlfredoWe actually had a lot of noodles left over and I didn’t cook all of the zucchini, since I didn’t think we needed it all! So we put together lunches with the uncooked zucchini! I took a bite of it and it tastes just as good just with a bit more crunch! So you could definitely opt to not cook the zucchini!

My overall rating! DELICIOUS!! Tyler has tried spaghetti squash before and wasn’t a fan. So when I got his approval of the zucchini pasta, I was a happy girl! Give this one a try!
